Abstract

This study examines the impact of gastronomic tourism on the cultural identity and local economic development of Metropolitan Lima. In recent years, Lima has emerged as an internationally renowned gastronomic destination, highlighting its culinary diversity and the fusion of ancestral traditions with contemporary influences. This phenomenon has not only enhanced the image of the city globally, but has also generated important repercussions on the cultural and economic life of local communities. The main objectives of the research are to evaluate how gastronomic tourism contributes to the valorization of local culture and to analyze its economic impact on the communities that participate in this activity. The results indicate that gastronomic tourism has strengthened the cultural identity of Lima by promoting indigenous ingredients and traditional culinary techniques, which has allowed communities to recover and maintain their traditions. In addition, it has generated significant economic growth, providing employment and business opportunities for local inhabitants. However, challenges related to sustainability and the need to involve communities in decision-making were also identified. In conclusion, the study highlights the importance of gastronomic tourism as a driver of sustainable development in Lima, recommending public policies that promote inclusive management that respects local culture, thus ensuring the continuity of its gastronomic legacy for future generations.
